Sesame Tahini, Apricot, and Sea Salt Energy Bites

When you need a pick-me-up or a quick post-workout recovery snack, reach for these salty-sweet nuggets packed with healthy fats, tart flavor, and satisfying crunch. 

Makes 10-15 bites 

  • 1/3 cup tahini (sesame paste) 
  • 1/4 cup dates, chopped 
  • 1/4 cup dried apricots or dried cherries (sour or naturally sweetened), chopped 
  • 1/3 cup shredded coconut or rolled oats 
  • 1/4 cup raw buckwheat groats* 
  • 1/4 teaspoon sea salt 
  • 2 tablespoons toasted sesame seeds, for coating (optional) 

Place all ingredients except for sesame seeds in a food processor and blend until combined, periodically scraping sides and bottom of container to incorporate mixture as needed. Refrigerate for 15 minutes. 

Form about 1 tablespoon of mixture into a ball and roll with hands or on a flat, clean surface. Repeat with remaining mixture to form 10-15 balls. 

If coating with sesame seeds, place sesame seeds in a shallow bowl. After forming each ball, roll ball in the sesame seeds to coat or for a lighter coating, sprinkle with sesame seeds. 

Store in a sealed container in the freezer for up to 3 months. Enjoy straight from the freezer or slightly thawed. 

 

*May be substituted for an additional 1/4 cup shredded coconut or rolled oats.
