Homemade Blueberry Pepita Granola Bars

Blueberry oat bars topped with granola and pumpkin seeds on a rustic wooden surface.

Makes 10-12 servings  

Filled with fiber, protein, and healthy fats, these homemade granola bars whip up quickly and will help nourish you for whatever your day might bring.   

  • 1-1/2 cups old-fashioned oats 
  • 1-1/4 cups whole wheat flour 
  • 1-1/4 cups light brown sugar 
  • 1/8 teaspoon cinnamon 
  • 1/2 teaspoon salt 
  • 3 eggs 
  • 1/2 cup oil 
  • 1/2 tablespoon vanilla extract 
  • 8 ounces blueberries 
  • 1/4 cup pepita seeds   

Preheat oven to 350 degrees F.   

Combine oats, flour, brown sugar, cinnamon, and salt. In a separate bowl, whisk together eggs, oil, and vanilla extract. Combine the wet and dry ingredients and mix until well blended. Fold in blueberries and pepita seeds. Spread into greased 9×13” pan, press slightly, and bake 25 minutes. Cool then cut into bars. Store in an airtight container for up to seven days.
